Recipe

Ingredients:

  • 1 medium-sized butternut squash, peeled, seeded, and diced

  • 1 onion, chopped

  • 2 carrots, peeled and chopped

  • 2 apples, cored and chopped

  • 4 cups vegetable or chicken broth

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • Salt and pepper to taste

  • Coconut milk or cream for garnish (optional)

  • Fresh sage leaves for garnish (optional)

Instructions:

  1. In a large pot, sauté onions until translucent. Add carrots, apples, and butternut squash. Cook for 5-7 minutes until slightly softened.

  2. Pour in the broth, add ginger and cinnamon, and bring to a gentle boil.

  3. Reduce heat, cover, and simmer until the vegetables are tender (approximately 20-25 minutes).

  4. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
